You all know that the Salad Queen of the wider Grind family is my sister-in-law, Wonderwife. I therefore thought of her the other day when I mixed this up to go along with some simple quesadillas: shredded white cabbage (shred that shit fine), some pan-roasted sweet corn, and finely sliced onions, all dressed in lime juice and whatever neutral oil you've got on hand (anything but olive, really; I used grapeseed, which worked fine). I'm not going to be challenging for the crown any time soon, I don't think, but this here was a pretty good start.

ooo, a throwdown. well, I will have to work on my one-upmanship, which is def in the low gear for summertime, and try to come up with something post worthy. its funny I was kind of working on an ode to basil post, which involved some salad type dishes (even it is served warm, I tend to resort to calling veggie side dishes salads. might not be fair, but thats the way the cotija crumbles.) so guess I better get going.
In the meantime, next time might I suggest either a handful of chopped cilantro to brighten up further this already yummy sounding salad. or a bit of whole cumin that you dry toast in a skillet and then grind yourself before adding. putting the grind into grind bros, so to speak. I usually like to add the cumin and some crumbled cotija whenever I make corn salad.

Aw, shit, now I meant to say that about the cilantro. In fact, I did say it as I was making this salad: what this really needs is a bit of cilantro. Makes me look like Mean Willie Come-Lately now, though. Bested again. And you've got me on the cumin -- that is a good idea.
