I don't pie -- every attempt I've ever made at making a pie crust has turned out more like sheet rock. I can't figure it. I know I've got the genes for it (thanks, ma!), but for some reason I just can't get them to express. I have been known on occasion, though, to cobble. They're nuts for blackberries over here, and I don't blame them. Grabbed a few baskets on mark-down today, and had this for dessert. It couldn't have been easier: start with enough blackberries to cover a buttered backing dish in a layer about two berries deep. Blackberries can be tart bastards, so mix in some sugar over top of them -- half a cup or so. Then top with a simple sweet biscuit dough: a cup of flour, two tsp baking powder, a half cup of sugar, and a stick of cold butter all cut together into a fine meal, then mixed with one beaten egg , a little splash of milk, and a half-teaspoon of vanilla. Plop that dough down in little spoon-sized plops loosely covering the fruit (it will expand). Then bake at 375 for 35 minutes or so. It ain't no fancy-pants pie. But it sure is delicious.
